GF Cashew Coconut Bread
This past weekend I stayed in MA to give my tush a rest from the car. Weekend goals included working out, overeating, laying on my floor and avoiding the car. I also had the time to test out a bunch of bookmarked recipes that I've been stockpiling for about 8 months now - many of which I posted to my Instagram story (the ones that came out edible!). I received A LOT of inquiries about the Cashew Coconut Bread. Including the recipe below - IT'S SO EASY, IT'S DUMB!! And delicious. And grain free! Weee!
I used a medium size loaf pan so I had some extra batter to make muffins, as well. The recipe is enough for 1 large loaf. So grab some butter, or make a sandwich. I also read that this is very good toasted. I don't have a toaster - but I imagine it's DELISH! No blender, no toaster, NO PROBLEMS!
